The 2021 Barbaresco from Sordo is a symphony of scent and flavor. The nose is an intoxicating blend of dried rose, violet, red cherry, and wisps of licorice and fresh tar. On the palate, it is both structured and ethereal. Bright, crystalline flavors of raspberry and sour cherry are woven together with firm, yet finely-knit tannins and a vibrant, linear acidity that gives the wine incredible energy and length. The finish is long, savory, and clean, leaving a haunting impression of rosehip and earthy truffle.
How To Enjoy It
- Serving Temperature: 16-18°C (60-64°F).
- Food Pairing: A sublime partner for complex dishes. Enjoy with wild mushroom risotto, truffle-infused pasta, roasted guinea fowl, or braised veal cheeks. The classic pairing with aged Castelmagno cheese is a must-try.
- Decanting: Essential. Decant for 60-90 minutes to allow the wine to soften and its profound aromatic complexity to fully emerge.
- Cellaring Potential: Possessing the classic structure of Nebbiolo, this wine will age gracefully. It is approachable now but will reward cellaring. Enjoy from 2026 through 2040+.
